What game?

Pick a game first. There are 4 main choices. I recommend Forza Motorsport or Grand Turismo. Watch some videos on YouTube, get a feel for the game-play before you make a choice. iRacing and Assetto Corsa Competizione are more advance options, but those require a gaming PC.
Each of those games have older versions that work with older consoles too.
If this is your first SimRacer, choose the game that works with your current console.
What system?

The game you chose only works on 1 type of console.
Grand Turismo is for PlayStation, a Sony product.
Forza Motorsport is for X-Box, a Microsoft product. Forza Horizon is also an option for a more open world exploration experience (less race track focused).
Pick the console that works with the game you have.
What wheel and pedals?

Logitech.
Logitech sells 2 main starter kits. One kit is for an X-box, and the other is for PlayStation. The buttons are what you are used to on each one; A B X Y, vs X O Square Triangle. Both options are also compatible with a PC. Starter kits such as the G923 include a wheel with paddle shifters, and pedals (clutch, brake, throttle).
Higher quality brands are Fanatec and Moza. They sell everything individually and, are an excellent upgrade path!
What screen?

A big one! I recommend an 34” ultra-wide gaming monitor with a higher refresh rate that exceeds the rating of your gaming console. This gets technical, so take your time and ask plenty of questions before you buy.
What cockpit?

The one that fits! I prefer a solid ridged frame that won’t flex or move when I am jamming through the turns and slamming on the brake pedal.
If you share your setup with friends, get a seat slider.
If you move your setup around a lot, get a folding one.
